- 4 eggs
- 2 cups sugar
- 3 cups flour
- 1 cup oil
- 1 cup buttermilk
- 2 tsp. coconut extract
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1/2 tsp. baking powder
- 1 cup coconut (optional)
- 1 cup sugar
- 1/2 cup water
- 1 tsp. coconut extract
- 2 Tbsp. butter
This ugly weather we’ve been having has driven me to bake. It’s one of my favorite things to do when it’s cold, snowy and yucky outside.
I have baked a batch of these dang cookies everyday this week, I think I might have a serious problem. If I know my freezer is out of dough balls, I kind of panic and have to whip up another batch of cookie dough. I haven’t heard any complaining though from my boys, in fact I’m pretty sure they are ok with me having an addiction to these cookies and cookie dough.
This yummy bread is another one of the many things I’ve baked. Last spring my son’s date he took to prom brought him a loaf of some aMaZinG coconut bread to thank him for the date. I hate to admit it but I’m 99% sure I ate over half the loaf myself, I couldn’t help it. I knew I needed to try and make some so I found this recipe and it’s pretty dang close to what his cute date brought him. It’s so moist on the inside and then the top turns kind of crispy and sugary from the glaze. It’s seriously scrumptious. If you are a coconut lover, you will absolutely love this bread!

Mix together the oil and the sugar.
Add the eggs and beat well.
Mix in the buttermilk and flavorings.
Add flour, salt, soda and baking powder, and mix until well blended.
Mix in 1 cup of flaked coconut.
Grease and prepare 2 small loaf pans. Bake at 325 degrees for 1 hour and five minutes. Cover with foil if bread starts to get too dark. Cool in pans for 10 minutes, while preparing the glaze.W
With a toothpick or skewer, poke holes all over the top of bread. Slowly pour glaze over bread. Allow to set in pans for a couple hours before taking the bread out of the pans.
- Mix all together over medium heat, and boil mixture for about 4 to 5 minutes. Spoon all of it over the bread. Leave in pans to put the glaze on.
