I love when Easter candy hits the store shelves.

Of all the holidays, I think Easter time is when the best candy is out there.

Who agrees?

The fact that Easter candy is my favorite, probably has to do with the fact that I think Reese’s peanut butter eggs are about the greatest invention ever in the world of candy.  I buy them in bulk this time of year, and I mean that literally.  Sam’s club sells a big bag of them and I buy one (or two) every year. I don’t know what it is about them, but the peanut butter to chocolate ratio is perfect and the peanut butter filling is even better than what’s in a regular Reese’s peanut butter cup.   Then there’s the cadbury mini eggs . . .so delicious and completely addicting.  I could go on, but I’ll stop there because I’m getting really hungry.

These Rice Krispy Easter eggs are all over Pinterest.  So here is my version of them.  Of course, I had to fill mine with a small Reese’s peanut butter egg.  If I would have been thinking, I could have bought the really big plastic eggs and put a full-size Reese’s peanut butter egg inside.  .  . how good would that have been?!?!? Maybe next time.

These are such a fun thing to make with your kids.  Your hands get a little messy, but if you spray them with nonstick spray, it really helps.  You can stuff any kind of candy you’d like on the inside, it doesn’t have to be chocolate. Be creative here . . . you could drizzle white chocolate over the top of these or dip one of the ends in melted chocolate and then roll it in sprinkles, really the possibilities are endless.  So go get your hands all gooey and sticky and have some fun!

Krispy Easter Eggs
 
Ingredients
  • 5 Tablespoons Butter
  • 1 package (10 Ounces) Mini Marshmallows
  • 5½ cups Rice Krispies
  • Assorted Sprinkles
  • Reese's Peanut Butter Eggs (or any chocolate candy you like)
  • Plastic Easter Eggs (I used two different sizes)
Instructions
  1. In a large saucepan heat butter and marshmallows over low heat, stir until melted. Remove from heat, then add rice cereal and stir until well coated.
  2. Lightly spray the inside of the plastic eggs with non-stick cooking spray. You can spray your hands if you need to. Fill both sides of the plastic egg with rice cereal mixture, press chocolate egg in the center on one side of the egg, then close the plastic egg to shape it. (It should be full enough to have a little resistance as you close it.) Let eggs sit for a couple of minutes then gently release the rice cereal egg from the egg, decorate with sprinkles.
Notes
I used the smaller, foil-wrapped Reese's eggs for this, not the big Reese's Peanut Butter Eggs. I made two different sizes of these and both worked out great. These are a fun thing to do with your kids for Easter. Also, I like my Rice Krispie treats more on the gooey side so I like to use a tad bit more butter and less Rice Krispies than the original recipe calls for.
